HOLY COW!!! It's 22 days till Christmas.. I don't have one christmas present bought... can you even believe that?? Hell, I can!! I love to do Christmas shopping! I love wrapping presents!!
I love decorating!! I love it all!! But do I love the craziness and the stress??? Hell yeah!! Is it all worth it?? Every second!! I love the holidays...and I start counting down for Christmas Jan 1st!! You are talking to someone who is sad the day the tree comes down..who sits and looks at the ornaments and thinks to herself wonder where I will be next time I unpack these ornaments.. wonder what changes will have happened in my life?? and you know every year they are momentus.. always big changes.. some good, some not so good... but in the long run always necessary.
As trite as it sounds, all our joy and happiness come from inside ourself. yeah yeah yeah.. I know what you are going to say.. easier to be happy with a big stack of money..but you know what?? Money is such a poor substitute for love...how can anyone be rich, if all they have is money??? So today I am making this wish to the Universe for you... I wish you LOVE!! Cause it's true...ALL YOU NEED IS LOVE! Once you have love in your life, everything makes sense; everything falls into place. So yes my foodies... Doug and I wish you a wild, juicy life filled with love!! Now get out there and live it!
FAST AND EASY PORCUPINE BALLS
2 lbs. ground beef
1 c. minute rice, uncooked
1/2 c. chopped onions
1 egg
2 c. BBQ sauce (K. C. Masterpiece is best)

Combine first 4 ingredients and 1/2 cup BBQ sauce and mix well. Shape into 1 inch balls. Brown lightly in skillet over low heat. Then add remaining 1 1/2 cups BBQ sauce. Cover and simmer 15 minutes. Delicious!

Vegetable Medley
1 1/2 lb. fresh broccoli
1/2 head cauliflower
2 med. zucchini, sliced
2 med. tomatoes, cut into wedges
3 tbsp. butter
2 tsp. Micro Shake chicken flavor
1/2 tsp. garlic salt
1/2 c. Parmesan cheese, grated

1. Trim broccoli; cut into pieces about 2 1/2 inches long with stalks about 1/4 inch thick. On a 12 inch round serving platter, arrange broccoli with flower ends toward outer edge.2. Cut cauliflower into similar-sized florets. Place a row around platter next to broccoli.3. Place zucchini next to cauliflower.4. Mound tomatoes in center of platter.5. Microwave, covered, on high for 12 minutes.6. Let stand, covered, for 5 minutes.7. In a small bowl, place butter and Micro Shake. Microwave on high for 1 minute.8. Drizzle butter over vegetables. Sprinkle with garlic salt and Parmesan cheese.
